Update flake.lock, add plugins, and new bind

Bump several flake.lock entries to newer revisions. Enable the color_picker, file-search, and nix-monitor plugins in Noctalia, import the nix-monitor configuration, and add a SUPER‑CONTROL‑F binding for file search while switching the color‑picker shortcut to the new plugin.
